This is it! The recipe to end all granola recipes! I'm not even exaggerating - this is my most favorite thing. The other day, I was asked what my favorite baked good was. Forget baked goods - I'll take a bowl of this granola! We go through a batch every week. It really is pretty simple and now I make sure I always have the ingredients.
First, I chop up a couple handfuls of almonds. I like them kind of a rough chop, so that G. can pick them out if he needs to.
I use a large bowl and just layer everything on top.
Add brown sugar:
Add coconut (I LOVE coconut!)
Add ground flax seed, cinnamon, and salt.
Mix it thoroughly:
In a separate bowl, measure out coconut oil.
Add agave syrup:
Microwave for about a minute. You could also do this in a pan on the stovetop. Add the vanilla and mix.
Add wet ingredients to dry ingredients and stir.
Spread into a thin layer on a cookie sheet and bake. Stir every 10 minutes.
After it is baked add dried cranberries. This is also M's favorite. She eats it for breakfast and snack!
After it is cool, we have to break up the clumps.

CINNAMON ROLL GRANOLA
4 1/2 cups oats - I always use old fashioned
3/4 cup brown sugar, packed
3/4 cup unsweetened coconut
1 cup almonds, chopped
3 T ground flax seed
3 t cinnamon
1 t sea salt
1/2 cup + 1 T coconut oil
3 T agave syrup
3 T vanilla
1 1/2 cup dried cranberries
Preheat oven to 300. Mix all dry ingredients in large bowl. Put coconut oil and agave in microwaveable bowl and cook for 1 minute. Add vanilla. Pour the wet ingredients over the dry ingredients and mix thoroughly. Spread in thin layer on cookie sheet and cook for 30 minutes, stirring every 10 minutes. Once cool, add dried fruit. May need to break up clumps.
