Do you know that salsa is the #1 condiment in America? Actually, I don't know that for sure, someone told me that about 15 years ago and I just believed it. I'd like to assume it is true. I sure is #1 for my husband and I. We are salsa addicts! Our favorite is fresh pico de gallo, but in the winter time, the tomatoes are some what lacking. This is our FAVORITE winter salsa recipe! I've made it for years and feel confident in its delicious-ness!
Quick and Delicious Salsa:
3/4 cup chopped red onion
1/2 cup minced fresh cilantro
1 can diced tomatoes and green chilies, undrained - I always use Rotel
1 can diced tomatoes with lime juice and cilantro, undrained - again Rotel
1 garlic clove

Throw everything into the blender and pulse a couple of times and DONE!! It has a little kick to it, which is what I like in my salsa! It seems to get hotter with time.
You should know that my hubby is a San Diego boy and takes his Mexican food very seriously. He'd rather eat at home with this salsa then go get any restaurant salsa. I just have to heat his tortilla chips and he is putty in my hands.
