In fact, when I made this batch and told Tom that I wasn't going to take them to anyone (which I usually do with sweets), I got major wife points. My husband is the opposite of a foodie - food just isn't his thing - but he LOVES these.
Actually, anyone who tries these LOVES these. I've given the recipe away countless times!
This one has my name written all over it. I better hide it!
When you make the icing, you play the game of add a little powdered sugar, add a little milk. Back and forth until the consistency is what you want. The icing hardens, so frost fast!
I'm embarrassed to admit that these will not even last a week at our home!
Pumpkin Chocolate Chip Cookies
1 cup shortening
1 cup sugar
1 cup pumpkin
1 egg
1 tsp vanilla
2 cups flour
1 tsp baking powder
1 tsp soda
1 tsp cinnamon
1/2 tsp salt
Fold in one bag of chocolate chips.
Icing: 3 TBSP butter, 1/2 cup brown sugar, 3 TBSP milk. Boil for 2 minutes. Add powdered sugar to consistency.
Blend the first 5 ingredients together. Add remaining ingredients. Fold in one bag of chocolate chips. Bake at 375 for 10-12 minutes. Frost when done.
Fall is officially here!
