I bread our chicken with gluten-free flour. I've never heard any complaints from anyone about this flour. This has also become one of the meals that I take to others. I tell you, everyone loves it! (PS - if you are local and have to take a meal for someone, DON'T use this recipe. Do you know how many years it has taken me to find a good go-to recipe?)
I put the flour, the chicken, and the seasonings in the bag and shake away.
Next, put the chicken in a 9x13 along with a stick of melted butter.
About an hour and a half later, and a bunch of photos that I forgot to take and dinner is served!
Chicken and Rice
4-5 chicken breasts (I usually only use 2-3 for my family)
1/2 c butter, melted
1/2 c flour
1 1/2 tsp salt
1 tsp seasoned salt
1/8 tsp pepper
1 c. rice
1 c. onion
3 c. chicken broth.
Pour melted butter in 9x13 pan. Mix flour, salt, seasoned salt, and pepper. Dredge chicken and put in pan. Bake uncovered at 375 for 30 minutes. Take chicken out of pan. Add rice, onion, and chicken broth to pan and stir. Put chicken back in and cover with foil. Bake for 25 minutes at 375. Take off foil and bake for 20 minutes.

Yum! This sounds way better than the ckn and rice I normally make. I was planning on leftovers for dinner tonight, but I think I'll make this instead.

OMG, I'm going to try this! I make a chicken and rice dish that is cooked on the stove top. I have a rice cooker so my rice is in it at all times. I cut up the chicken breast in nice size chunks and out them in a pot. I cut up tomato's and onion (sounds wierd, but the tomato cooks down to nothing and you really don't taste it)put them in the pot. Then I add chicken flavored Maggie cubes (bullion cubes), with salt and pepper and olive oil. THe chicken breast make its own water, but you can always add a cup. It taste so good over rice! My boys use to love it, but now they are so picky!

This is great. I love that it is simple and there are a 1000 ways to change in up (add broccoli, cheese, etc.).

What a winning recipe. Most all kids love chicken and rice. I think I'll try it with sticky rice. Yum.
PS. I have a new go-to favorite for a bring'em dinner. (We have tons of new babies in our congregation). I take homemade soup in a canning jar with a cute bow around it. That plus a baguette- I'm set.
