Saturday's Harvest

I could have easily titled this "Got Cukes?"  Goodness gracious, I cannot keep up with them.  All 3 kids, though, will willingly eat cucumbers.  We've brought a whole bag to Tom's office, I've made Darby's Sweet Crunch Dills (which are delicious and I have plans to make more), we eat at least one every day, but I'm running out of ideas!  Help!

Green beans - blanched and eaten for dinner.  The leftovers were frozen.  I. suggested that these would be delicious for Thanksgiving.  I'm sure we'll eat these before then, but I like to try figure out the way that girl's mind works.
Lovely Snow White Tomatoes - yummy!  Just pop them in.

These are called Donna tomatoes.
I handed the kiddos grocery sacks and asked them to pick anything ripe - this is what they came up with.  I did go back and pick a couple of peppers to add to this.

Sadly, our garden is winding down. We have totally enjoyed it - and our bellies have thanked us.

Yum. We have a few beans left to be harvested, but everything else was hit by this late very hot weather.

Wow! I wish I had that overabundance issue with my cucumbers instead of my zucchini. I have a feeling it's easier to eat cucumbers galore instead of zucchini galore (just a personal preference, I guess).

Wow! I really wish I was able to plant a garden this year. I'm no help with the cucumbers...maybe a Greek salad???

beautiful harvest :) I'm no help with cuke recipes, we eat them sliced with a sprinkling of vinegar.

You have quite a harvest there! Love it! Have you tried cutting up the cucumbers juliann style and sprinkling with just a little salt? They are like cool crunchy french fries!

love me some fresh veggies also...just something about the taste in the summer compared to the winter stuff in the grocery stores...
